Pancakes

STOP right there- this is it, the pancake recipe that'll make you banish all instant pancake mixes, and even want to make them for dinner. At least I think so and I've tried out ALOT of recipes. One of the things I love about it is it makes a nice thick pancake that you can cook fruit into, making it even healthier for the kiddies. AND its really easy and uses stuff you usually have in the kitchen.



3 large eggs
1/4 cup sugar (the origional recipe called for a full cup, I suppose you could eliminate it totally too, I chose somewhere in between...)
4 tblspn butter (melted)
1 cup white flour
1/2 cup brown flour (feel free to play around with the white to brown flour ratio)
1/4 cup of wheat germ or ground flax seed maybe bran (have'nt tried that one yet!) basically any nutrient-boosters you may have around to sneak in on the kids.
1 cup milk
1 tblspoon baking powder
pinch salt

whisk egg, sugar and butter in med bowl.
add flour and milk alternating in 3 additions.
whisk in b. powder and salt.
laddle onto skillet, place fruit on uncooked side before flipping.
