apple spice muffins

These are seriously good.

1 cup flour
1/2 cup brown flour
1 1/2 tspn baking powder
1/2 tspn baking soda
1/2 tspn cinnamon
1/2 tspn ground all spice
1/4 tspn grated nutmeg
1/4 tspn salt
2 large eggs
1 cup packed brown sugar
1/2 cup butter melted
1 cup applesauce
1 cup pecans/walnuts (optional)
topping; 2 tblspn sugar
1/4 tspn. cinnamon/allspice/nutmeg

preheat oven 400
Stir together flour, baking powder, baking soda, spices and salt.
Whisk eggs and brown sugar in a large bowl until well combined, then add butter a little at a time, whisking untill mixture is creamy. Stir in applesauce, then fold into flour mixture untill flour is moistened. Stir in nuts if using. Scoop into awaitong muffin tins, sprinkle topping on and then bake until puffed and golden, about 20 minutes.

Using fresh ground nutmeg really kicks up the flavour. If you have some ground flaxseed, bran or wheat germ around sneak it in, if I do I usually add less flour so they are not too dry, or a little more apple sauce. If there is time, I like to make the applesauce, it really is simple to do and I'll usually make extra for the kids. I found that making the applesauce a little chunky gave me the best muffins. I even managed to can some apple sauce this year. If this is all a little too domestic sounding too you, by all means any unsweetened applesauce will do. I love useing the mini- silicone muffin trays, they are the perfect size for little hands. I always double this recipe as they move fast.
